Alpine Cheeses: The Authentic Flavour of The Mountains

Valchiavenna

In the valleys of Valchiavenna and Valtellina, cheese is far more than food. It is a living expression of mountain pastures, hard work and centuries-old knowledge. Production techniques, still closely linked to mountain life and seasonal rhythms, reflect the identity of these territories.

Details

Traditional dairy cheese is produced in small valley dairies, where milk is carefully transformed into products with distinctive characteristics. Produced between October and May, Latteria cheese may be full-fat or semi-fat. The former is soft and delicate when young, while the latter develops a firmer texture and a more intense, slightly spicy flavour as it matures.
Alongside it, Valtellina Casera is one of the most recognised expressions of local cheesemaking tradition. Originating from historic cooperative dairies, it is produced from partially skimmed cow’s milk using traditional methods, including calf rennet coagulation and slow ageing.

The result is a compact cheese whose colour ranges from white to straw yellow. Its flavour is sweet and delicate at first, gradually developing more intense notes and subtle hints of dried fruit. It is also a key ingredient in iconic regional dishes such as pizzoccheri and sciatt.
At higher elevations, Bitto comes to life, often considered the king of alpine cheeses. Produced during the summer in mountain pastures, it is made from the milk of cows fed exclusively on high-altitude wild herbs, which give the cheese its distinctive aromas and flavours. With ageing, Bitto develops a firmer texture, deeper colour and increasingly complex taste.

Its origins are ancient and closely connected to the history of alpine communities, blending Celtic traditions with farming practices passed down through generations. Bitto remains one of the symbols of alpine cheesemaking because its production is still deeply linked to mountain pastures, high-altitude processing and seasonal mountain life. Production takes place only during the summer months directly in alpine huts, using freshly milked milk processed according to centuries-old methods. This strong connection to its territory, combined with its remarkable ageing potential, has made Bitto one of the most prestigious historic cheeses of the Alpine region.
Among the most delicate and authentic flavours are goat cheeses such as mascarpin. These small, fresh ricotta-style cheeses become richer in flavour during the summer when produced from the milk of goats grazing in alpine pastures. Often smoked to improve preservation, they develop a golden colour and a distinctive aroma that is both simple and irresistible.

These products can be discovered and tasted throughout the region in agritourism farms, alpine huts, local farms and crotti across Valchiavenna and Valtellina, where cheesemaking traditions remain an integral part of alpine culture and local gastronomy.

These cheeses embody the spirit of the mountains: the pastures, the ancient skills of cheesemakers and a flavour that continues to express the authenticity of nature.
